RICETTA DEL GIORNO: SUGO AI FRUTTI DI MARE, SEAFOOD SAUCE

This seafood pasta sauce is delicious, light and healthy. You will have the best results if you buy fresh ingredients. My favorite place to shop for fresh fish here in Atlanta is the Buford Highway International Farmers Market. It’s a crazy, big, chaotic market where you can literally find anything you need from any part of the world! I know it’s not the same as when I go to the “pescheria” (fish store) in Ancona, but I get what I can! This pasta sauce has a very short cooking time but the flavor comes out like you have been cooking for the whole day! Little effort, big results 😉

Tagliatelle ai frutti di mare. Seafood tagliatelle

Ingredients

  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic, sliced
  • red pepper flakes
  • 1 cup dry white wine
  • 20 clams
  • 1 small can chopped tomatoes
  • 20 black mussels
  • 10 shrimp, shelled (tail intact) and deveined
  • 8 baby sea scallops
  • 5 ounces calamari, cut into thin rings
  • 1/4 cup fresh flat-leaf parsley, coarsely chopped

Giulia’s directions:

To open and cook clams and mussels, put them in a pot with some water. Make sure to cover it with the lid and let it cook it for about 3 minutes or till they open.  Cook shrimp and calamari in a pan with some extra virgin olive oil, garlic and salt. Same for the scallops is a separate pan. Put oil in a large sauté pan over medium heat. Cook garlic until it sizzles. Add red pepper flakes to taste; cook 1 minute. Add the fish and wine and cook for a few minutes. After the wine is evaporated, add the chopped tomatoes and let simmer for about 10-15 minutes. Add parsley and mix with your favorite pasta.
