Spezzatino di manzo al vino rosso e paprika

This is one of my family’s favorites. It’s been a few years that I have made it not every week but almost. It’s a great dish that you can serve in many different ways. With mashed potatoes, farro, rice, couscous, pasta, gnocchi or just some bread. Every time I make it, I always make a little extra so I can freeze some meat for a quick dinner and the sauce for a yummy pasta dish in case I have last-minute guests 😉.

Ingredients:

  • 4 tbs extra virgin olive oil
  • 4 cloves garlic
  • 4 pounds stewing beef
  • 3 tbs paprika
  • 2 cups red wine
  • 2 large cans tomato sauce
  • salt
  • black pepper
  • bay leaf

Giulia’s directions:

In a large pot sauté garlic with some extra virgin olive oil and let it cook for a few minutes, till golden brown.  Add the meat and cook it till all the sides are lightly roasted, add the paprika and red wine and let it cook till the wine evaporates. At this point you can add the tomato sauce, salt, pepper and bay leaf. Cover and let it cook for at least 2 hours at medium-low heat, stirring occasionally.

The meat is ready when tender. It will be easy to break with just a fork.
